Winter is here!
You want to be good and eat your vegetables but is too cold for salads… You want something warm but you don’t know what you can cook for dinner/lunch?
Here is an idea to have some vegetables, other than in a salad form, easy to cook, with loads of nutrients and soooo yummy. You can use the vegetables from below or you can make other combinations, depending on what you have in the fridge or what veggies you like more:
- red bell pepper
- yellow bell pepper
- butternut squash
- sweet potato
- purple onion
- purple cabbage
- olive oil
- dried basil
Chop the vegetables and put them in a pan greased with butter.
Coat them with some olive oil…
Add the spices: oregano and basil
Add salt and pepper.
Place them in a preheated oven at 350°C for 25 minutes (beets, carrots & potatoes can be pre-roasted a bit because they take longer than the other vegetables).
And that’s it. Simple, fast, yummy.
