Simple to made, only 4 ingredients, low carb and delicious.
You should avoid combining fatty foods (like mozzarella) with carbs (like rice, pasta or potatoes). I had it with a yummy salad, made of spring green leaves, red onion, cucumber, tomatoes, bell pepper, olives and olive oil.
The recipe is easy to make and it doesn’t take much time: 10 min for preparation and 35 min for cooking.
- 3 large chicken breast
- 2 balls of mozzarella
- plum tomatoes
- fresh basil
- salt & paper
- grated cheese (optional)
Preheat the oven at 350 F (180 C).
In a oven pan place the chicken breast.
With a sharp knife make some deep, symmetric cuts across the chicken breast, creating “pockets”.
Each “pocket”, stuff it with a slice of mozzarella, a slice of tomato and a leave of fresh basil.
Sprinkle with salt and pepper.
Add some grated cheese on top of the chicken.
Sprinkle with some olive oil.
Put it in the oven for 35 min (the time you leave it in the oven can vary depending how big is the chicken breast).
